How hard would it be, if possible, to just edit a file for one modification?

I've been having a bunch of minor issues with mods in-game that have all added up to me just being fed up with em and I want to get back to vanilla. Only thing I'd be missing would be the 2x default zoom level. If it's possible to just go in and change one line in a vanilla game file, how would I go about that?
